Maple-Braised Ham (The Best)
Ingredients
- 1 bone-in smoked pork shoulder, about 4.4 lb (2 kg)
- 1 cup (250 ml) amber or dark maple syrup
- 1 onion, halved
- 1 tsp black peppercorns
Instructions
- Remove the string from the pork and place in a large pot. Cover with cold water and bring to a boil. Simmer over medium heat for 30 minutes. Remove the pork from the pot and discard the water.
- Return the pork to the pot. Add the remaining ingredients and cover with cold water. Bring to a boil. Cover and simmer gently for 3 hours or until the meat easily falls from the bone. Turn the pork over halfway through cooking, adding water as needed. Remove from the heat. Let rest for 15 minutes. Drain and set the cooking juices aside.
- On a work surface, remove the rind, bone and any excess fat from the meat. Place on a serving dish and drizzle with some of the hot cooking juices. Serve with mashed potatoes and vegetables, if desired.
