Pork Salad Pita Sandwiches
Ingredients
- 1 lb (450 g) boneless pork chops, ¾ inch (2 cm) thick (about 3 pork chops)
- 1 tbsp (15 ml) olive oil
- 12 kalamata olives, pitted and coarsely chopped
- 2 green onions, thinly sliced
- 1 red bell pepper, seeded and diced
- 3 tbsp (45 ml) sour cream
- ½ tsp dried oregano
- ¼ tsp garlic powder
- 2 pita breads (see note), halved
- Basil pesto, to taste
- Boston lettuce leaves
- 1 tomato, sliced
- 2 Lebanese cucumbers, sliced into long ribbons
Instructions
- In a large non-stick skillet over medium-high heat, brown the pork chops in the oil for 3 minutes on each side. Season with salt and pepper. Let cool on a plate for 10 minutes.
- Meanwhile, in a bowl, combine the remaining ingredients.
- On a work surface, pat the pork chops dry with paper towels. Using a knife, cut away the excess fat from the pork. Dice the pork chops and add to the bowl of salad. Mix well. Adjust the seasoning.
