Pork Chops on Wilted Leek and Apples
Ingredients
- 2 yellow apples, cored and each cut into 12 wedges
- 1 leek, diced
- 2 tablespoons (30 ml) butter
- 1/2 cup (125 ml) white wine
- Salt and pepper
- 8 cloves garlic, peeled and halved
- 12 fresh sage leaves
- 1/4 cup (60 ml) butter
- 4 pork chops, about 1-inch (2.5-cm) thick with the bone, fat removed
- 1 tablespoon (15 ml) all-purpose flour
- 1 can 10 oz (284 ml) concentrated chicken broth
- 1 teaspoon (5 ml) dry mustard
Instructions
- In a non-stick skillet, sauté the apples and leek in the butter, without browning. Add the white wine and simmer until the leek is tender and the wine has evaporated. Season with salt and pepper. Keep warm.
