Ingredients

  • 1 ½ lb (675 g) haddock fillets, cut into 4 pieces
  • 1 tbsp fresh ginger, chopped
  • 1 garlic clove, chopped
  • 1 tbsp (15 ml) vegetable oil
  • 1 can (14 oz/398 ml) coconut milk
  • 2 tsp (10 ml) fish sauce
  • 1 tsp brown sugar
  • 1 tbsp (15 ml) store-bought spicy chili crisp (see note)
  • 1 green onion, thinly sliced
  • 1 lime, quartered

Instructions

  1. On a work surface, season the haddock pieces with salt.
  2. In a large skillet over medium-high heat, soften the ginger and garlic in the oil. Add the coconut milk, fish sauce and brown sugar. Continue to cook for 1 minute while stirring.
  3. Place the fish in the sauce. Bring to a boil. Cover and simmer for 6 minutes. Remove from the heat and let sit for 5 minutes or until the fish is cooked through.
  4. Transfer the fish to a shallow serving dish. Keep warm. Reduce the sauce for 1 to 2 minutes.
  5. Pour the sauce over the fish. Garnish with the chili crisp and green onion. Serve with the lime wedges and a crunchy salad, if desired.
