Pasta with Green Peas and Salmon
Ingredients
- 3/4 lb (340 g) small shells pasta
- 12 green onions, thinly sliced
- 2 tbsp butter
- 1/4 lb (115 g) sugar snap peas, trimmed
- 2 cups (300 g) frozen green peas, thawed
- 1/2 cup (125 ml) 15% or 35% cooking cream
- 1/2 cup (125 ml) chicken broth
- 1 lb (450 g) skinless salmon fillet
- 2 tbsp (30 ml) olive oil
Instructions
- In a pot of boiling salted water, cook the pasta until al dente. Set aside 1/2 cup (125 ml) of the cooking water. Drain the pasta and oil lightly.
- In a large skillet over medium-high heat, soften the green onions in the butter. Add the sugar snap peas and continue cooking for 2 minutes. Add the green peas, cream and chicken
- broth. Simmer for 3 minutes or until the sugar snap peas are tender. Add the pasta and continue cooking until the pasta has absorbed the sauce and has thickened slightly. Season with salt and pepper.
- Meanwhile, in a glass dish, coat the salmon in oil. Season with salt and pepper. Cover with plastic wrap. Cook in the microwave oven for 1 to 2 minutes, depending on the size of
- the microwave, or until the salmon is cooked through. Break it up into flakes with a fork.
- Divide the pasta among 4 shallow bowls. Top with the salmon.
