Pasta Salad with Citrus
Ingredients
- 1 orange, grated zest only
- 1 lemon, grated zest only
- 3 tablespoons (45 ml) orange juice
- 3 tablespoons (45 ml) lemon juice
- 1 tablespoon (15 ml) Dijon mustard
- 1/2 lb (225 g) tubetti or other short pasta
- 1 1/2 cups (375 ml) arugula (optional)
- 1 1/2 cups (375 ml) grated carrots
- 1/2 cup (125 ml) pine nuts, toasted
- 2 green onions, chopped
- 1/4 cup (60 ml) olive oil
- Parmigiano-Reggiano shavings, to taste
- Salt and pepper
Instructions
- In a bowl, combine all the ingredients. Set aside.
