Pancakes and Blueberry Sauce
Ingredients
- 3 cups (750 ml) fresh or frozen blueberries
- 1/2 cup (125 ml) apple juice
- 3/4 cup (180 ml) sugar
- 1 teaspoon (5 ml) lemon juice
- 1 cup (250 ml) all-purpose flour
- 1 teaspoon (5 ml) baking powder
- 3 eggs, separated
- 1/2 cup (125 ml) buttermilk
- 1/2 teaspoon (2.5 ml) vanilla extract
- 3 tablespoons (45 ml) unsalted butter
Instructions
- In a saucepan, combine all the ingredients. Bring to a boil and simmer on medium heat for about 15 minutes, stirring frequently. Let cool at room temperature.
