Overnight Oats (Bircher Muesli)
Ingredients
- 1/2 cup (50 g) quick-cooking rolled oats
- 1/2 cup (125 ml) soy or almond beverage, or milk
- 2 tbsp currants
- 1 pinch ground cinnamon
- 3 tbsp (45 ml) plain Greek yogurt
- 1 tbsp pumpkin seeds, toasted (or roasted nuts)
- 1/2 cup (68 g) fresh berries of your choice
- Maple syrup or honey (optional)
Instructions
- In a small bowl or a 2-cup (500 ml) airtight container, combine the rolled oats, soy beverage, currants and cinnamon. Cover and refrigerate for 30 minutes or overnight, until the oats have plumped up (see note).
- Just before serving, stir in the yogurt, pumpkin seeds and berries and drizzle with maple syrup or honey if desired.
