One-Pot Creamy Beans with Sausage

This one-pot dish is perfect for when you want minimal cleanup on a busy weeknight. It combines sausage, tomato paste, spinach and sun-dried tomatoes in oil for a wonderful combination of flavours. At the end, add beans and cream to create a luscious sauce.

Ingredients

  • ¾ lb (340 g) spicy or mild Italian sausages, casings removed
  • 2 tbsp (30 ml) olive oil (see note)
  • 2 garlic cloves, chopped
  • 1 tbsp (15 ml) tomato paste
  • 6 cups (140 g) baby spinach
  • ⅓ cup (65 g) oil-packed sun-dried tomatoes, julienned
  • 2 cans (14 oz/398 ml each) lima beans or white beans, rinsed and drained
  • 1 cup (250 ml) 15% cooking cream or 35% cream
  • 2 tbsp basil leaves, finely chopped, plus more for serving
  • Toasted bread, for serving

Instructions

  1. In a large skillet over medium-high heat, brown the sausage meat in the oil, breaking it up with a wooden spoon. Add the garlic and tomato paste. Continue to cook for 1 minute while stirring.
  2. Add the spinach and sun-dried tomatoes to the skillet. Mix well and continue to cook until the spinach is wilted.
  3. Add the beans and cream to the skillet. Season lightly with salt and pepper. Bring to a boil. Simmer for 3 minutes or until the sauce thickens. Add the basil. Adjust the seasoning.
  4. Serve the bean mixture in bowls. Garnish with basil leaves and serve with toasted bread.
