One-Pot Creamy Beans with Sausage
This one-pot dish is perfect for when you want minimal cleanup on a busy weeknight. It combines sausage, tomato paste, spinach and sun-dried tomatoes in oil for a wonderful combination of flavours. At the end, add beans and cream to create a luscious sauce.
Ingredients
- ¾ lb (340 g) spicy or mild Italian sausages, casings removed
- 2 tbsp (30 ml) olive oil (see note)
- 2 garlic cloves, chopped
- 1 tbsp (15 ml) tomato paste
- 6 cups (140 g) baby spinach
- ⅓ cup (65 g) oil-packed sun-dried tomatoes, julienned
- 2 cans (14 oz/398 ml each) lima beans or white beans, rinsed and drained
- 1 cup (250 ml) 15% cooking cream or 35% cream
- 2 tbsp basil leaves, finely chopped, plus more for serving
- Toasted bread, for serving
Instructions
- In a large skillet over medium-high heat, brown the sausage meat in the oil, breaking it up with a wooden spoon. Add the garlic and tomato paste. Continue to cook for 1 minute while stirring.
- Add the spinach and sun-dried tomatoes to the skillet. Mix well and continue to cook until the spinach is wilted.
- Add the beans and cream to the skillet. Season lightly with salt and pepper. Bring to a boil. Simmer for 3 minutes or until the sauce thickens. Add the basil. Adjust the seasoning.
- Serve the bean mixture in bowls. Garnish with basil leaves and serve with toasted bread.
