Nordic Shrimp Rolls
Ingredients
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp dill, finely chopped
- 1 lemon, zest finely grated
- 2 tsp (10 ml) lemon juice
- 1/4 cup (60 ml) sour cream
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) whole-grain mustard
- 1 tbsp parsley, finely chopped
- 2 tsp (10 ml) lemon juice
- 1 green onion, chopped
- 1 lb (450 g) Nordic shrimp, fresh or frozen and thawed, peeled and patted very dry
- 1 1/4 cups (145 g) celeriac, julienned on a mandoline or grated
- 1/2 green apple, julienned on a mandoline or grated
- Tabasco-style sauce, to taste
- 4 brioche hot dog buns
- 8 Boston lettuce leaves
- 1 Lebanese cucumber, sliced into thin rounds on a mandoline
- 1 radish, sliced into thin rounds on a mandoline
- 3 tbsp fresh samphire (see note)
- Dill fronds, to taste
Instructions
- In a bowl, whisk together all of the ingredients. Season with salt and pepper. Cover and refrigerate until ready to use.
