Mashed Red Potatoes with Sausages and Peas

Ingredients
- 4 cups (680 g) red potatoes, unpeeled, cubed
- 3 garlic cloves, peeled
- 3 tbsp butter
- ⅓ cup (75 ml) milk
- 4 Toulouse sausages
- 1 shallot, chopped
- 1 tbsp unbleached all-purpose flour
- 1 1/2 cups (375 ml) chicken broth
- 1 ½ cups (225 g) frozen green peas, thawed
- 3 tbsp flat-leaf parsley, finely chopped
- 1 tbsp (15 ml) lemon juice
- 1 lemon, zest finely grated
Instructions
- Place the potatoes and garlic in a pot. Cover with cold water and season with salt. Bring to a boil. Simmer for 12 minutes or until the potatoes are tender. Drain. Return the potatoes and garlic to the pot.
- Using a potato masher, purée the potatoes and garlic with 2 tbsp of the butter. Add the milk. Season with salt and pepper. Keep warm.
- Meanwhile, in a large non-stick skillet over medium heat, brown the sausages on both sides with the shallot in the remaining butter.
- Add the flour to the skillet and continue to cook for 30 seconds, stirring constantly. Pour in the broth. Season with salt and pepper. Bring to a boil while stirring. Simmer for 5 minutes. Flip the sausages over and continue to cook for 5 minutes or until they are cooked through and the sauce has thickened.
- Add the peas, parsley and lemon juice to the skillet. Simmer for 2 minutes to heat the peas. Adjust the seasoning.
- Divide the mashed potatoes among four plates. Top with the sausages. Cover with the sauce and peas. Garnish with the lemon zest.
