Maple Caramelized Pineapple and Coconut French Toast
Ingredients
- 3/4 cup (180 ml) maple syrup
- 1 pineapple, peeled and diced
- 1 can 14 oz (398 ml) coconut milk, lightly warmed
- 4 eggs, lightly beaten
- 1/2 cup (125 ml) sugar
- Grated zest of 1 lime
- 2 tablespoons (30 ml) lime juice
- 6 to 8 large slices stale country bread
- 1/4 cup (60 ml) unsalted butter
- 1/4 cup (60 ml) sugar
- Maple syrup, to taste
Instructions
- In a large skillet, heat maple syrup until it begins to caramelize. Add pineapple and cook over medium heat, stirring frequently, for about 5 minutes or until it has released its juices and begins to caramelize. Let cool.
