Low-fat Cretons
Ingredients
- 1 lb (454 g) lean ground pork
- 1/2 cup (125 ml) white wine
- 1/2 cup (125 ml) water
- 1 onion, finely chopped
- 8 soda crackers, finely crushed
- 2 tablespoons (30 ml) Dijon mustard
- 2 cloves garlic, finely chopped
- 1/4 teaspoon (1 ml) ground coriander
- 1/4 teaspoon (1 ml) dried oregano
- 1 pinch ground cloves
- 1 pinch ground cinnamon
- Salt and pepper
Instructions
- Place all ingredients in a saucepan and bring to a boil, stirring constantly, until the meat is cooked. Season with salt and pepper. Reduce the heat to low, cover and simmer for about 1 hour, stirring frequently.
- Scrape the mixture into two 250 ml (1 cup) terrines or ramekins. Let cool. Cover and refrigerate for about 8 hours or overnight.
