Little Meat Pies
Ingredients
- 3 1/2 cups (875 ml) flour
- 1 teaspoon (5 ml) salt
- 1 cup (250 ml) unsalted butter, very cold, cut into pieces
- 1/4 cup (60 ml) vegetable shortening, very cold, cut into pieces
- 125-1/2 to 2/3 cup (150 ml) ice water
- 1/2 lb (250g) lean ground pork
- 1/2 lb (250g) ground veal
- 2 tablespoons (30 ml) vegetable oil
- Salt and pepper
- 1/2 cup (125 ml) finely chopped onion
- 1/4 teaspoon (1 ml) ground cinnamon
- 1/8 teaspoon (0.5 ml) ground cloves
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/4 teaspoon (1 ml) ground savory
- 2 teaspoons (10 ml) breadcrumbs
- 1 beaten egg
- 2 tablespoons (30 ml) water
Instructions
- In the bowl of a food processor, place the flour and salt. Pulse a few seconds to blend. Add the butter and shortening. Pulse, a few seconds at a time, until the mixture has a grainy texture.
- Add the water. Pulse, adding a little water if needed, until the soft dough forms a ball. Remove the dough from the processor. Shape into a ball with your hands. Dust with flour and cover in plastic wrap. Refrigerate for at least 1 hour.
