Lime Rice
Ingredients
- 2 cups (500 ml) basmati rice
- 1 tablespoon (15 ml) oil
- 3 cups (750 ml) chicken broth
- 2 tablespoons (30 ml) honey
- Grated zest of 1 lime
- 1 tablespoon (15 ml) lime juice
- 2 green onions, chopped
- Salt and pepper
Instructions
- In a saucepan, sauté the rice in the oil for about 2 minutes, without browning. Add the broth, honey and lime zest. Season with salt and pepper. Bring to a boil. Reduce the heat to low, stir and cover. Cook for 15 to 20 minutes or until the rice is tender. Add the lime juice and green onions. Adjust the seasoning.
- Serve with the Citrus Tilapia.
