Grilled Artichoke Bottoms with Labneh and Bean Salad

Ingredients
- 1 can (14 oz/398 ml) water-packed artichoke bottoms, rinsed and drained
- 1/4 cup (60 ml) olive oil
- 6 tbsp (90 ml) labneh
- 1 can (14 oz/398 ml) lima beans, rinsed and drained
- 1 small shallot, finely chopped
- 3 tbsp dill, finely chopped
- 2 tbsp (30 ml) lemon juice
Instructions
- Preheat the grill, setting the burners to high. Oil the grate.
- Coat the artichokes with 1 tbsp (15 ml) of the oil. Grill for 2 minutes on each side. Let cool on a plate.
- In a small bowl, stir the labneh with a fork. Season with salt and pepper. Set aside.
- In another bowl, combine the beans, shallot, lemon juice, dill and remaining oil. Season with salt and pepper.
- Stuff the artichokes with the labneh. Place on a large shallow dish. Top the artichokes with some of the bean mixture. Place the remaining bean mixture on the plate around the artichokes.
