Island Lobster Newburg

Ingredients

  • 4 live lobsters, about 1 lb (454 g) each
  • 1/4 cup (60 ml) butter
  • 2 tablespoons (30 ml) flour
  • 1 1/4 cups (310 ml) milk
  • 1/4 cup (60 ml) 35% cream
  • 1/4 cup (60 ml) chopped flat-leaf parsley
  • 1/2 teaspoon (2.5 ml) paprika
  • 1 pinch ground nutmeg
  • 1/4 cup (60 ml) dry sherry
  • White port
  • Salt and pepper
  • 1/2 lb (225 g) mushrooms, cut into quarters
  • 2 tablespoons (30 ml) butter
  • 2 tablespoons (30 ml) chopped fresh chives
  • Zest of 1/2 lemon
  • Salt and pepper

Instructions

  1. Place water in a large stockpot or Dutch oven to a depth of about 2.5 cm (1 inch). Salt generously and bring to a boil. Place the lobsters in the boiling water. Cover and steam for about 9 minutes, counting from when the water returns to a boil.Meanwhile, start making the sauce.
