Irish Oatmeal with Pears and Maple
Ingredients
- 1 1/4 cups (310 ml) steel-cut oats
- 1 tablespoon (15 ml) butter
- 5 cups (1.25 litre) water
- 1/4 teaspoon (1 ml) salt
- 1 tablespoon (15 ml) butter
- 2 tablespoons (30 ml) sugar
- 2 pears, peeled, cored and diced
- 2 tablespoons (30 ml) currants
- 1/2 cup (125 ml) shelled pecans, toasted and coarsely chopped
- Maple syrup
Instructions
- In a saucepan over medium-high heat, toast the oats in the butter for 2 minutes. Add the water and salt. Bring to a boil, reduce the heat and simmer gently, uncovered, until the oatmeal thickens and is tender, 25 to 30 minutes, stirring frequently, especially toward the end.
