Hot Chicken-Style Sandwiches with Duck
Ingredients
- 6 tbsp (85 g) butter
- 1/4 cup (40 g) unbleached all-purpose flour
- 1 tsp sweet paprika
- 1/2 tsp chili powder
- 1/4 tsp celery salt
- 2 cups (500 ml) chicken broth
- 2 onions, thinly sliced
- 1 garlic clove, finely chopped
- 2 cups (300 g) frozen peas, thawed
- 2 duck confit thighs, skin removed, deboned and shredded
- 8 slices of bread
Instructions
- In a pot over medium-high heat, melt ¼ cup (55 g) of the butter. Add the flour and spices. Cook, stirring continuously, for 2 minutes or until the mixture is lightly golden. Pour in the broth. Bring to a boil and simmer for 5 to 8 minutes or until the sauce thickens. Season with salt and pepper.
- Meanwhile, in a large non-stick skillet over medium-high heat, soften the onions and garlic in the remaining butter. Add the green peas and the duck and stir until heated through. Season with salt and pepper.
- Divide the duck mixture on 4 slices of bread. Drizzle with some of the sauce. Top with the remaining slices of bread, and drizzle with the remaining sauce. Serve immediately.
