Ingredients
- 1 lemon, zest finely grated
- 1/4 cup (60 ml) honey
- 2 tbsp (30 ml) vegetable oil
- 1 tbsp (15 ml) lemon juice
- 2 tsp (10 ml) Dijon mustard
- 1 1/2 tsp sweet paprika
- 1/2 tsp garlic powder
- 5 lb (2.3 kg) chicken drumsticks with skin (about 16 drumsticks)
- 6 tbsp (90 ml) honey
- 2 tbsp (30 ml) prepared yellow mustard
- 1 tbsp (15 ml) Dijon mustard
- 1 tbsp (15 ml) lemon juice
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
- In a large bowl, whisk together all of the ingredients except for the chicken. Season with salt and pepper. Transfer 3 tbsp (45 ml) of the marinade to a small bowl and set aside.
- Add the chicken to the large bowl of marinade and toss to coat well. Place the chicken on the baking sheet. Bake for 30 minutes.
- Remove the baking sheet from the oven. Using a pastry brush, cover the chicken with the reserved marinade. Bake for another 10 minutes or until the chicken is golden and cooked through.
