Ingredients
- 2 tbsp (30 ml) honey
- 2 tbsp (30 ml) ketchup
- 1 tbsp (15 ml) low-sodium soy sauce
- 1 garlic clove, finely chopped
- 2.2 lb (1 kg) chicken drumsticks, skin on
- 1 lb (450 g) Nantes carrots, halved lengthwise
- 4 cups (120 g) kale leaves, stems removed, leaves torn
- Roasted sesame seeds, to taste
- 1/4 cup (60 ml) honey
- 3 tbsp (45 ml) low-sodium soy sauce
- 3 tbsp (45 ml) water
- 1 tbsp (15 ml) rice vinegar
- 2 tsp cornstarch
- 2 garlic cloves, finely chopped
- 1 tbsp (15 ml) vegetable oil
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
- In a large bowl, combine the honey, ketchup, soy sauce and garlic. Season with salt and pepper. Add the chicken to the bowl and mix well. Spread the chicken out on the baking sheet and add the carrots. Bake for 30 minutes.
- Remove the baking sheet from the oven. Flip the drumsticks over and stir the carrots. Spread the kale leaves over the baking sheet. Season lightly with salt. Bake for another 8 minutes or until the kale is slightly crispy, the chicken is cooked through and the carrots are tender.
