Ingredients
- 4 green onions, thinly sliced
- 2 garlic cloves, chopped
- 2 tbsp butter
- 1 cup (200 g) long grain parboiled rice
- 2 cups (500 ml) chicken broth
- ½ cup (20 g) mixed herbs, finely chopped (such as parsley, cilantro, chives)
- 2 tsp (10 ml) lime juice
Instructions
- In a small pot over medium heat, soften the green onions and garlic in the butter. Add the rice and cook for 30 seconds, stirring to coat the rice in the butter. Pour in the broth. Season with salt and pepper. Bring to a boil. Cover and simmer over low heat for 20 minutes or until the liquid has been completely absorbed. Remove from the heat. Let sit, covered, for 5 minutes.
- Fluff the grains of rice with a fork. Add the herbs and lime juice. Mix well. Delicious served alongside a vegetarian chili.
