Hearty Vegetable and Apricot Couscous

Ingredients

  • 2 tbsp (30 ml) olive oil
  • 1 pinch ground cinnamon
  • 1 pinch ground cumin
  • 2 cups (500 ml) vegetable broth
  • 1 tbsp (15 ml) harissa
  • 1 carrot, halved lengthwise and cut into chunks
  • 1 small red onion, quartered
  • 1 can (14 oz/398 ml) chickpeas, rinsed and drained
  • 1/2 cup (100 g) dried apricots, diced
  • 2 cups (400 g) couscous
  • 1 green onion, finely chopped

Instructions

  1. In a pot over medium-high heat, heat the oil and the spices. Add the broth, harissa, carrot, onion, chickpeas and dried apricots. Season with salt and pepper. Bring to a boil. Cover and simmer for 5 minutes. Remove from the heat.
  2. Add the couscous and stir to combine. Cover and let rest for 5 minutes. Fluff the couscous with a fork. Adjust the seasoning. Divide the couscous among 4 plates. Sprinkle with the green onion. Serve with grilled merguez sausages, if desired.
