Grilled Chicken with Tomato, Mango and Quinoa Salad
Ingredients
- 125 ml (1/2 cup) quinoa, rinsed and drained
- 2 medium red tomatoes, each cut into 8 wedges
- 2 medium yellow tomatoes, each cut into 8 wedges
- 1 large mango (or two small), peeled and diced
- 1 green onion, chopped
- 45 ml (3 tbsp) chopped fresh mint
- 30 ml (2 tbsp) lemon juice
- 30 ml (2 tbsp) olive oil
- Salt and pepper
- 5 ml (1 tsp) mustard seeds, crushed
- 5 ml (1 tsp) coriander seeds, crushed
- 2.5 ml (1/2 tsp) sweet paprika
- 4 skinless and boneless chicken breast halves
Instructions
- In a saucepan of salted boiling water, cook the quinoa for 12 to 15 minutes or until tender. Rinse under cold running water and drain well. Place in a large bowl.
- Add the remaining ingredients. Season with salt and pepper. Set aside.
