Green Papaya Salad
Papaya salad is an essential of Thai cuisine. Though the authentic recipe is very spicy, we came up with a version that allows you to calibrate the intensity to your liking, according to your degree of tolerance to the chili.
Ingredients
- 3 tbsp (45 ml) fish sauce
- 3 tbsp (45 ml) lime juice
- 1 tbsp cane sugar or brown sugar
- 2 garlic cloves, chopped
- 1 bird’s eye chili pepper, seeded and finely chopped, or more to taste
- 2 1/2 cups (275 g) green papaya, julienned (about 1 papaya, 1 lb/450 g, peeled and seeded) (see note)
- 1 carrot, julienned
- 3/4 cup (105 g) cherry tomatoes, halved
- 1/2 cup (75 g) roasted salted peanuts, chopped, plus more for serving
- 1/4 cup (10 g) Thai basil leaves, torn, plus more for serving
Instructions
- In a large bowl, whisk together the fish sauce, lime juice, sugar, garlic and chili pepper.
- Add the remaining ingredients to the bowl. Season with salt and mix well. Transfer the salad to a serving dish. Top with more peanuts and basil leaves. Serve immediately. Serve with rice, meat or grilled fish, if desired.
