Fried Egg Sandwiches
Ingredients
- 1/4 cup (60 ml) mayonnaise
- 4 tsp (20 ml) Dijon mustard
- 4 tsp (20 ml) chives, finely chopped
- 1 tomato, sliced
- 1 avocado, sliced
- 1 lime wedge
- Tabasco sauce (optional)
- 8 slices sandwich bread
- 2 tbsp (30 ml) butter
- 4 eggs
- 8 Boston lettuce leaves
Instructions
- In a bowl, combine the mayonnaise, mustard and chives. Set aside.
- Place the tomato and avocado slices on a plate. Drizzle with lime juice and a few drops of Tabasco sauce, if desired. Season with salt and pepper.
- In a skillet over low heat, melt the butter and fry the eggs, cooking them on one side only. Season with salt and pepper.
- Meanwhile, toast the bread in the toaster.
- Spread the mayonnaise mixture on the toast. Garnish four of the toast slices with the tomato, avocado and lettuce. Top each with an egg and close the sandwiches. Serve immediately.
