Fried Cod and Pickle Burgers
Elevate your fish burger by adding a crunchy fried pickle! It’s your new summer must-have!
Ingredients
- 1/3 cup (75 ml) mayonnaise
- 1 green onion, chopped
- 1 tbsp (15 ml) lemon juice
- ½ tsp (2.5 ml) wasabi paste
- 1 ¼ cups (190 g) unbleached all-purpose flour
- ¾ cup (180 ml) cold pale ale
- 2 tsp dill, finely chopped
- ¾ lb (340 g) cod fillets, cut into 4 pieces
- 1 large dill pickle, cut into 4 long slices
- Vegetable oil, for frying
- 4 slightly elongated hamburger buns, cut in half (see note)
- A few Boston lettuce leaves
Instructions
- In a bowl, combine all of the ingredients. Cover and refrigerate.
