Flaxseed Crêpes
Ingredients
- 3 tablespoons (45 ml) flax seeds
- 3 eggs
- 1 cup (250 ml) milk
- 3/4 cup (180 ml) water
- 2 tablespoons (30 ml) melted butter
- 2 tablespoons (30 ml) sugar
- A pinch of salt
- 1 cup (250 ml) flour
Instructions
- In a coffee or flaxseed grinder, grind the flax seeds.
- In a bowl, whisk together all of the ingredients, except for the flaxseed, until the mixture is smooth. Pass the batter through a sieve. Stir in the ground flaxseed. Let rest for 15 minutes.
- Preheat a non-stick skillet over medium heat. Brush with butter. Pour about 75 ml (1/3 cup) of batter for each pancake. Cook for 1 to 2 minutes per side or until golden brown. Keep warm.
