Fish Sticks
Ingredients
- 400 g frozen haddock fillets
- 3 tbsp (30 g) unbleached all-purpose flour
- 1 ½ tsp onion salt
- ¼ tsp sweet paprika
- 2 eggs
- 1 cup (125 g) breadcrumbs
- 1 tbsp butter
- 1 tbsp (15 ml) oil
Instructions
- On a work surface, cut the fillets widthwise to obtain 16 sticks. Set aside.
- In a shallow bowl, combine the flour, onion salt and paprika. In a second shallow bowl, lightly beat the egg. In a third shallow bowl, place the breadcrumbs.
- Dredge the fish sticks in the flour, shaking off any excess. Next, dip the sticks in the beaten eggs, letting any excess drip off. Coat with the breadcrumbs. Place on a baking sheet. Freeze at this point, if desired.
- In a large nonstick skillet over medium heat, cook the fish sticks in the butter and oil for 3 to 4 minutes per side.
- Serve with rice and a green salad, if desired. Serve with ketchup, mayonnaise or fish sticks sauce, if desired.
