Fish Cakes with Horseradish Mayonnaise
Ingredients
- 1/2 cup (125 ml) mayonnaise
- 1 tbsp (15 ml) prepared horseradish
- 1 tsp (5 ml) Dijon mustard
- 3 cups (510 g) potatoes, peeled and cubed
- 8 garlic cloves, peeled
- 1 cup (95 g) leek, chopped
- ⅓ cup (75 g) butter
- 1 lb (450 g) haddock or cod, cut into pieces
- 3/4 cup (95 g) breadcrumbs
- 1 tbsp (15 ml) olive oil
Instructions
- In a bowl, combine all the ingredients. Refrigerate until ready to serve.
