Fermented Pizza Dough (Poolish)
Ingredients
- 1 ¼ cups (190 g) unbleached all-purpose flour
- ¾ cup (180 ml) room temperature water
- ½ tsp instant yeast
- 1 cup (250 ml) room temperature water
- 2 1/3 cups (350 g) unbleached all-purpose flour
- 2 tsp sugar
- 1 ½ tsp salt
Instructions
- In a large bowl with a wooden spoon, or in a stand mixer fitted with the dough hook, combine all of the ingredients until smooth. Cover with a damp dishcloth and let sit at room temperature for 2 hours or until doubled in volume.
