Extra-Tender Pork Meatballs

To cook this recipe, use our extra-tender pork meatballs, which can be used in many other ways, such as with roasted bell peppers and barbecue sauce, as well as with squash in a cream sauce.

Ingredients

  • 2 eggs
  • 1 cup (250 ml) milk
  • 2 cups (60 g) crispy rice cereal (Rice Krispies-style)
  • 2.2 lb (1 kg) lean ground pork
  • 1/2 cup (35 g) Parmesan cheese, freshly grated
  • 3 tbsp (45 ml) Dijon mustard
  • 1 tbsp (15 ml) sambal oelek
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 pinch ground cloves

Instructions

  1. With the rack in the middle position, preheat the oven to 425°F (220 °C). Line a baking sheet with a silicone mat or parchment paper.
  2. In a large bowl, combine the eggs, milk and rice cereal. Let soak for 5 minutes. Add the remaining ingredients. Mix well with your hands. Season with pepper. The mixture will be delicate.
  3. With lightly oiled hands, roll 1/4 cup (60 ml) of the mixture at a time into a ball. Gently place on the prepared baking sheet.
  4. Bake for 30 minutes or until cooked through.
