Gluten-Free Almond-Lemon Cookies
These lemon-flavoured cookies feature the citrus in the cream, the filling and in the cookie, which also includes zest and almond liqueur. The cookies don’t contain flour, but rather ground almonds, giving them a soft and chewy texture. Their taste is reminiscent of an amaretto sour cocktail. Cheers!
Ingredients
- 2 lemons
- ¼ cup (55 g) sugar
- 2 tsp cornstarch
- 2 egg yolks
- 2 tbsp unsalted butter
- ⅓ cup (45 g) icing sugar
- ¾ cup (160 g) sugar
- 2 cups (260 g) ground almonds
- ¼ tsp salt
- 2 egg whites, at room temperature
- 2 tbsp (30 ml) almond liqueur (amaretto-style)
Instructions
- Zest the lemons over a large bowl and set aside for the cookie dough. Over a measuring cup, squeeze the lemons to obtain ½ cup (125 ml) of juice.
- In a small pot off the heat, whisk together the sugar and cornstarch. Add the egg yolks and mix well. Stir in the lemon juice.
- Cook over medium heat, stirring constantly and scraping the bottom and sides of the pot until the mixture has thickened. Remove from the heat.
- Stir the butter into the lemon cream. Transfer to a bowl. Cover with plastic wrap directly on the surface of the cream. Refrigerate while you make the cookie dough.
