Egg White Waffles
Ingredients
- 2 cups (300 g) unbleached all-purpose flour
- 6 tbsp (50 g) icing sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups (375 ml) buttermilk (see note)
- ¼ cup (60 ml) canola oil
- 4 egg whites
Instructions
- In a large bowl, whisk together the flour, icing sugar, baking powder, baking soda and salt.
- Add the buttermilk, oil and egg whites. Mix well.
- Preheat a waffle iron. Pour about ½ cup (125 ml) of batter at a time into the device (or follow the manufacturer’s instructions) and close. Cook for 2 to 3 minutes or until golden.
- Keep warm in an oven preheated to 200°F (95°C) as you cook the remaining waffles or serve them as you go. The waffles can be frozen or refrigerated at this point, if desired. When ready to serve, reheat the waffles in the oven or toaster oven.
