Double Chocolate Waffles

Ingredients

  • 1 ½ cups (225 g) unbleached all-purpose flour
  • ½ cup (50 g) cocoa powder, sifted
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1/3 cup (70 g) brown sugar
  • 1 tsp (5 ml) vanilla
  • 1/3 cup (75 ml) canola oil
  • 4 oz (115 g) milk or dark chocolate, chopped
  • 1 ½ cups (375 ml) buttermilk

Instructions

  1. In a bowl, combine the flour, cocoa powder, baking soda and salt.
  2. In another bowl, whisk the eggs, brown sugar and vanilla with an electric mixer for 5 minutes or until pale, forms a ribbon and triples in volume. Gradually whisk in the oil. Using a spatula, fold in the dry ingredients and chocolate alternating with the buttermilk until everything is moistened (a few lumps of flour will remain). Let the batter rest for 10 minutes.
  3. Preheat a waffle iron. Pour about 1/3 cup (75 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.
  4. Serve the waffles with vanilla yogurt and Black Cherry Compote, if desired.
