Double Chocolate Waffles
Ingredients
- 1 ½ cups (225 g) unbleached all-purpose flour
- ½ cup (50 g) cocoa powder, sifted
- ½ tsp baking soda
- ½ tsp salt
- 2 eggs
- 1/3 cup (70 g) brown sugar
- 1 tsp (5 ml) vanilla
- 1/3 cup (75 ml) canola oil
- 4 oz (115 g) milk or dark chocolate, chopped
- 1 ½ cups (375 ml) buttermilk
Instructions
- In a bowl, combine the flour, cocoa powder, baking soda and salt.
- In another bowl, whisk the eggs, brown sugar and vanilla with an electric mixer for 5 minutes or until pale, forms a ribbon and triples in volume. Gradually whisk in the oil. Using a spatula, fold in the dry ingredients and chocolate alternating with the buttermilk until everything is moistened (a few lumps of flour will remain). Let the batter rest for 10 minutes.
- Preheat a waffle iron. Pour about 1/3 cup (75 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.
- Serve the waffles with vanilla yogurt and Black Cherry Compote, if desired.
