Curried Turkey Pasta
Ingredients
- 1 red onion, thinly sliced
- 1/4 cup (55 g) butter
- 3 garlic cloves, finely chopped
- 2 tsp curry powder
- 1 pinch ground nutmeg
- 1/4 cup (40 g) unbleached all-purpose flour
- 4 cups (1 litre) milk, hot
- 1/2 cup (75 g) frozen peas
- 1/2 cup (70 g) chopped carrots, blanched
- 2 cups (340 g) cooked turkey meat, chopped
- 3/4 lb (340 g) fusilli, cooked al dente
Instructions
- In a saucepan over medium heat, brown the onion in the butter. Add the garlic, curry powder and nutmeg and cook for 1 minute, stirring constantly. Add the flour and cook for 1 minute more, stirring constantly. Gradually whisk in the milk. Cook gently until the sauce thickens.
- Add the peas and carrots. Season with salt and pepper. Simmer gently for a few minutes. Add the turkey and pasta and stir until heated through. Adjust the seasoning.
