Curried Turkey Pasta

Ingredients

  • 1 red onion, thinly sliced
  • 1/4 cup (55 g) butter
  • 3 garlic cloves, finely chopped
  • 2 tsp curry powder
  • 1 pinch ground nutmeg
  • 1/4 cup (40 g) unbleached all-purpose flour
  • 4 cups (1 litre) milk, hot
  • 1/2 cup (75 g) frozen peas
  • 1/2 cup (70 g) chopped carrots, blanched
  • 2 cups (340 g) cooked turkey meat, chopped
  • 3/4 lb (340 g) fusilli, cooked al dente

Instructions

  1. In a saucepan over medium heat, brown the onion in the butter. Add the garlic, curry powder and nutmeg and cook for 1 minute, stirring constantly. Add the flour and cook for 1 minute more, stirring constantly. Gradually whisk in the milk. Cook gently until the sauce thickens.
  2. Add the peas and carrots. Season with salt and pepper. Simmer gently for a few minutes. Add the turkey and pasta and stir until heated through. Adjust the seasoning.
