Creamy Lasagna with Squash and Roast Pork
Ingredients
- 12 lasagna noodles
- 2 1/2 cups (250 g) grated mozzarella cheese
- 1 1/2 lb (675 g) lean ground pork
- 1/3 cup (75 ml) olive oil
- 5 cups (1.25 litres) butternut squash, peeled, seeded and cubed (1 medium squash)
- 2 onions, thinly sliced
- 1/2 cup (125 ml) chicken broth
- 1/3 cup (75 g) butter
- 1/2 cup (75 g) unbleached all-purpose flour
- 2 cups (500 ml) chicken broth
- 2 cups (500 ml) milk
- 1 cup (70 g ml) Parmesan cheese, freshly grated
- ¼ tsp ground nutmeg
Instructions
- In a pot of salted boiling water, cook the pasta until al dente. Drain and rinse under cold water. Lightly oil the pasta. Set aside.
