Creamless Penne Romanoff
Ingredients
- 3 tbsp butter
- 3 tbsp unbleached all-purpose flour
- 1 1/2 cups (375 ml) milk
- 1 lb (454 g) penne rigate
- 1 lb (454 g) white mushrooms, quartered
- 3 tbsp (45 ml) butter
- 3 green onions, thinly sliced
- 2 garlic cloves, finely chopped
- 1/2 cup (125 ml) vodka
- 1 cup (250 ml) canned diced plum tomatoes, drained
- 1 cup (70 g) fresh Parmesan cheese, finely grated (optional)
- 2 green onions, thinly sliced
Instructions
- In a pot over medium heat, melt the butter. Add the flour and cook for 1 minute while whisking. Gradually add the milk, whisking constantly. Bring to a boil, stirring constantly and simmer over low heat for a few minutes. Season with salt and pepper. Keep warm.
