Couscous with Apple Juice and Dates
Ingredients
- 1 cup (250 ml) fresh apple juice
- 2 tablespoons (30 ml) maple syrup
- 1/4 teaspoon (1 ml) ground cinnamon
- 1 cup (250 ml) couscous
- 1/2 cup (125 ml) Medjool dates, pitted and quartered
- 1/2 cup (125 ml) toasted slivered almonds
Instructions
- In a saucepan, bring the apple juice, maple syrup and cinnamon to a boil. Remove from the heat. Stir in the couscous and dates. Cover and let rest for 5 minutes. Fluff with a fork. Add the almonds.
- Serve hot or warm for breakfast.
