Cold Salmon Fillet Stuffed with Shrimp and Vegetables

Ingredients

  • 1/2 cup (125 ml) mayonnaise
  • 1/4 cup (60 ml) sour cream
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp fresh mint, finely chopped
  • 1 lemon, zest finely grated
  • 1/2 orange, juice only
  • 2 tbsp butter, softened
  • 2 cups (60 g) spinach, trimmed and chopped
  • 1 lb (450 g) salmon fillet, skin removed
  • 1/2 lb (250 g) sole fillet
  • 1 tbsp (15 ml) lemon juice
  • 6 oz (170 g) large shrimp, peeled, cooked and chopped
  • 6 asparagus, trimmed, blanched and cooled

Instructions

  1. In a bowl, combine all the ingredients. Refrigerate until ready to serve.
