Cod and Herb Gratin
Ingredients
- 1 cup (30 g) curly parsley leaves
- 1 tbsp dill fronds
- 1 green onion, cut in chunks
- 1 garlic clove, halved
- ½ Fresno or jalapeño pepper, seeded and halved
- 1/3 cup (75 ml) olive oil
- 1 ½ lb (675 g) cod fillets, cut into 4 pieces
- ½ cup (40 g) panko breadcrumbs
- Lemon wedges, for serving
Instructions
- With the rack in the middle position, preheat the oven to 450°F (230°C).
- In the bowl of a hand blender, finely chop the herbs, green onion, garlic and chili pepper with ¼ cup (60 ml) of the oil. Season generously with salt and some pepper. Transfer the mixture into an 11 x 8-inch (28 x 20 cm) baking dish. Coat the cod in the herb mixture and spread the pieces out in the dish.
- In a bowl, combine the breadcrumbs with the remaining oil. Divide among the pieces of cod, pressing down to adhere.
- Bake for 12 minutes or until the fish is cooked and the breadcrumbs are golden. Serve with lemon wedges and a green salad, if desired.
