Coconut Milk Broth (for fish and seafood fondue)
Ingredients
- 5 cups (1.25 litres) chicken broth
- 1 can 14 oz (398 ml) light coconut milk
- 2 green onions, chopped
- 2 tablespoons (30 ml) chopped lemongrass
- 1 tablespoon (15 ml) fish sauce
- 1/2 teaspoon (2.5 ml) sambal oelek or hot pepper sauce, to taste
- Salt and pepper
Instructions
- In saucepan, bring all the ingredients to a boil and simmer for about 5 minutes. Season with salt and pepper.
