Coconut Milk Broth (for fish and seafood fondue)

Ingredients

  • 5 cups (1.25 litres) chicken broth
  • 1 can 14 oz (398 ml) light coconut milk
  • 2 green onions, chopped
  • 2 tablespoons (30 ml) chopped lemongrass
  • 1 tablespoon (15 ml) fish sauce
  • 1/2 teaspoon (2.5 ml) sambal oelek or hot pepper sauce, to taste
  • Salt and pepper

Instructions

  1. In saucepan, bring all the ingredients to a boil and simmer for about 5 minutes. Season with salt and pepper.
