Citrus and Vanilla Salad
Ingredients
- 1 vanilla bean, halved lengthwise
- 1/4 cup (60 ml) sugar cane syrup (see note)
- 4 clementines, scrubbed clean
- 3 oranges (or blood oranges, or both), scrubbed clean
- 2 pink grapefruit, scrubbed clean
- 1 lemon, scrubbed clean and cut into quarters
- 1 lime, scrubbed clean and cut into quarters
Instructions
- With the tip of a knife, scrape the seeds from the vanilla pod.
- In a bowl, combine the cane syrup with the vanilla seeds and pod. Set the vanilla syrup aside.
- On a work surface, cut off and discard the ends of the clementines, oranges and grapefruits. Cut each clementines in 3 thick slices. Cut the oranges and grapefruits in half, then quarter.
- In a large serving platter, place the citrus randomly. Squeeze and drizzle with the lemon and lime wedges and add them on the plate. Drizzle with the vanilla syrup.
