Chopped Italian-Style Salad
We love the simplicity of an Italian-style chopped salad. Just chop all the ingredients, then mix in the dressing. And what about the Italian touch? Salami and mozzarella cheese are added to the vegetables.
Ingredients
- 1/4 cup (60 ml) olive oil
- 3 tbsp (45 ml) white balsamic vinegar or white wine vinegar
- 1 tsp dried oregano
- 1 garlic clove, finely grated
- 2 romaine lettuce hearts, thinly sliced
- 1 small radicchio, thinly sliced
- 1 can (19 oz/540 ml) white beans or Romano beans, rinsed and drained
- 1/2 English cucumber, cut into halfmoons
- 1 cup (140 g) cherry tomatoes, halved
- 4 oz (115 g) Genoa salami, julienned
- 4 oz (115 g) provolone or mozzarella cheese, diced
- Pickled banana pepper rings, to taste
Instructions
- In a large bowl, whisk together all of the ingredients. Season with salt and pepper.
