Chocolate, Honey and Cranberry Granola
Start your day with a delicious mix of cocoa-coated oats, dried cranberries and pumpkin seeds. Lightly sweetened with local honey and dark chocolate, this granola provides an effortless boost of energy.
Ingredients
- 3/4 cup (180 ml) honey
- 2 tbsp (30 ml) water
- 6 tbsp (85 g) butter
- 1/4 cup (25 g) cocoa
- 3 cups (300 g) large-flake oats
- 1 pinch salt
- 3/4 cup (115 g) dried cranberries
- 3/4 cup (120 g) roasted pumpkin seeds
- 3 oz (85 g) dark chocolate, chopped
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper.
- In a large pot over low heat, stir the honey and water with the butter and cocoa until the butter is melted. Remove from the heat.
- Add the oats to the pot and stir to coat with the honey mixture. Spread the oat mixture out on the baking sheet. Sprinkle with salt.
- Bake for 30 minutes, stirring every 10 minutes. Let cool completely, about 1 hour.
- Add the cranberries and pumpkin seeds to the granola. Delicious drizzled with more honey. Serve over plain yogurt, if desired. The granola will keep for 1 month in an airtight container at room temperature.
