Chocolate, Honey and Cranberry Granola

Start your day with a delicious mix of cocoa-coated oats, dried cranberries and pumpkin seeds. Lightly sweetened with local honey and dark chocolate, this granola provides an effortless boost of energy.

Ingredients

  • 3/4 cup (180 ml) honey
  • 2 tbsp (30 ml) water
  • 6 tbsp (85 g) butter
  • 1/4 cup (25 g) cocoa
  • 3 cups (300 g) large-flake oats
  • 1 pinch salt
  • 3/4 cup (115 g) dried cranberries
  • 3/4 cup (120 g) roasted pumpkin seeds
  • 3 oz (85 g) dark chocolate, chopped

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper.
  2. In a large pot over low heat, stir the honey and water with the butter and cocoa until the butter is melted. Remove from the heat.
  3. Add the oats to the pot and stir to coat with the honey mixture. Spread the oat mixture out on the baking sheet. Sprinkle with salt.
  4. Bake for 30 minutes, stirring every 10 minutes. Let cool completely, about 1 hour.
  5. Add the cranberries and pumpkin seeds to the granola. Delicious drizzled with more honey. Serve over plain yogurt, if desired. The granola will keep for 1 month in an airtight container at room temperature.
