Chicken Taquitos
Ingredients
- 1 large ripe avocado, peeled and pitted
- 1 lime, juice only
- 1 green onion, chopped
- ½ jalapeño pepper, seeded and chopped
- 2 cups (340 g) cooked chicken, coarsely chopped
- 1 cup (100 g) Tex-Mex cheese, grated
- 2 green onions, thinly sliced
- 10 small soft wheat tortillas, 6 inches (15 cm) in diameter
- 2 tbsp (30 ml) canola oil
- Iceberg lettuce, thinly sliced
- Homemade or store-bought salsa
- Sour cream
Instructions
- In a bowl, crush the avocado with a fork. Add the lime juice, green onion and jalapeño. Season with salt and pepper. Mix well. Set aside.
