Chicken Osso Bucco
Ingredients
- 12 chicken drumsticks
- 2 tablespoons (30 ml) olive oil
- 3 cups (750 ml) diced carrots
- 1 onion, chopped
- 1 clove garlic, chopped
- 1 can (398 ml/14 oz) crushed tomatoes
- 1/2 cup (125 ml) white wine
- 1/2 cup (125 ml) chicken broth
- Salt and pepper
- Grated zest of 1 orange
- 1/4 cup (60 ml) coarsely chopped flat-leaf parsley
- 1/4 cup (60 ml) grated Parmigiano-Reggiano
- 2 tablespoons (30 ml) olive oil
Instructions
- With the rack in the middle position, preheat the oven to 180°C (350°F).
