Ingredients
- 1 red onion, thinly sliced
- 1 red or yellow bell pepper, seeded and cut into strips
- 2 tbsp (30 ml) vegetable oil
- 1 lb (450 g) boneless, skinless chicken thighs, cut into strips
- 2 tsp chili powder
- 1/4 cup (10 g) cilantro leaves
- 1 lime, quartered
- 8 soft wheat tortillas, each 7 inches (18 cm) in diameter, warmed
- 2 cups (200 g) mild orange cheddar cheese, grated
- Homemade or store-bought salsa, to taste
- Homemade or store-bought guacamole, to taste
- Sour cream, to taste
Instructions
- Place the cast iron pan in the pizza oven. Preheat the pizza oven on high (MAX) with the door closed for 20 minutes.
- Meanwhile, in a bowl, combine the onion and bell pepper with 1 tbsp (15 ml) of the oil. Season with salt and pepper. Set aside.
- In another bowl, combine the chicken with the chili powder and remaining oil. Season with salt and pepper.
- Place the chicken on the hot cast iron pan. Watch out for splattering. Bake with
- the door closed for 4 minutes, stirring halfway through, or until the chicken is cooked.
- Add the vegetables. Bake with the door closed for another 3 to 5 minutes or until the
- vegetables are golden, stirring as needed.
