Chicken Cutlets with Lemon and Thyme
Ingredients
- 2 garlic cloves, unpeeled, lightly crushed
- 2 tbsp (30 ml) vegetable oil
- 1 lb (450 g) chicken cutlets
- 2 tbsp (30 ml) lemon juice
- 1 tsp thyme, leaves separated
Instructions
- In a large non-stick skillet over medium heat, infuse the garlic in the oil until they start to turn golden brown. Remove from the skillet and set aside on a plate.
- Add the cutlets to the skillet and cook for 2 minutes per side. Season with salt and pepper. Add the lemon juice and thyme. Remove from the heat and spoon the cooking juices that are in the skillet over the cutlets. Serve with the reserved garlic, if desired.
- Delicious served with green bean and tomato salad.
