Chicken and Pear Sandwiches
These generous sandwiches loaded with chicken salad are perfect for a picnic. Crisp celery and pear combined with basil, 11% plain yogurt and whole-grain mustard pairs wonderfully with pieces of cooked chicken. The ciabatta rolls are just brimming with summery flavour.
Ingredients
- 1 celery stalk, chopped
- 1 pear, ripe but firm, diced
- 1 green onion, chopped
- 2 tbsp basil leaves, finely chopped, plus more for serving
- 2 tbsp mint leaves, finely chopped, plus more for serving
- 1 lemon, zest finely grated
- 1 tbsp (15 ml) lemon juice
- 1/2 cup (125 ml) 11% plain yogurt
- 1 tbsp (15 ml) vegetable oil
- 1 tbsp (15 ml) whole-grain mustard
- 1 cup (170 g) cooked chicken, diced
- 2 ciabatta baguettes, halved horizontally (mini baguette format, each 9 inches/23 cm long)
- 4 leaves Boston or curly-leaf lettuce
Instructions
- In a bowl, combine the celery, pear, green onion and herbs. Stir in the lemon zest and juice and mix to coat well. Add the yogurt, oil and mustard. Mix well. Add the chicken and mix well to coat with the sauce. Season with salt and pepper.
- Top the baguette bottoms with the lettuce leaves and chicken mixture. Add more basil and mint leaves. Close with the tops of the breads. Cut the sandwiches in half.
